Top Chef to Open Fresko Greek Restaurant Next Week in Ahwatukee Arizona

fresko-restaurant-arizona(Ahwatukee, Phoenix, Arizona, United States) – Next week, top chef Koby Harris, who was the executive chef at the Thirsty Lion Gastropub and Grille and who also owns a restaurant concept consulting business, is opening a new Greek restaurant called Fresko, which is scheduled to open next week.

She describes the concept for this restaurant as “fast casual” while also highlighting the best that Greek cuisine has to offer. A spokeswoman remarks that Harris has, “the secrets of fresh, homemade Greek cuisine in her blood.” Her father was both Greek and a chef, and she gets her love of Greek cuisine and her passion for the restaurant business from him.

She has been working in restaurants for most of her life, starting at eight years old when she would help in her family’s restaurant and also with the cooking at home. She took her passion on a professional level thirty years ago, beginning as a line cook. Now, she has opened over 22 restaurants as part of her consulting business.

When asked describe her new restaurant project she said that, “Fresko is the restaurant I’ve always wanted, from top to bottom. Fresko translates to ‘fresh,’ and that’s exactly what we offer in this kitchen. Great food doesn’t have to be unhealthy food.”

This is Harris’s chance to share the family recipes from Greece that she is so passionate about. Offerings on the menu include favorites such as spanakopita, souvlaki, and keftedes. She will also have dessert offerings such as baklava bougatsa. Overall, she stuck to the traditional principals of the Mediterranean diet when designing her menu.

The decor is also distinctly Greek. The spokeswoman said, “The restaurant’s interior is focused on recreating the authentic Greek home experience, with reclaimed barn wood walls, intricate tile work and a natural, countryside vibe. Paying homage to her roots, the walls include a side-by-side photo of her grandfather in his kitchen and Harris in hers.”

The restaurant isn’t serving alcohol, but guests can bring their own beer, wine, and spirits.The grand opening will be on Tuesday, November 15, 2016 and will be open from 11 AM to 9 PM.
