Eligible Greek Singles

Ingredients:

  • 1 bunch fresh spinach or 1 package fresh spinach
  • 1/2 cup ricotta cheese
  • 1/2 cup feta cheese
  • 3 - 4 cloves minced garlic
  • 4 skinless, boneless chicken breasts pounded thin or 4 chicken cutlets
  • Salt and pepper for seasoning
  • 6 - 8 slices of bacon (optional)

Directions:

  1. Preheat oven to 375 degrees
  2. Heat spinach in a pan until wilted
  3. Place wilted spinach in a bowl. Add minced garlic, ricotta and feta. Mix well. 
  4. Season each chicken breast with salt and pepper. 
  5. Fill each chicken breast with a spoonful of spinach mixture. Roll (spinach mixture inside) chicken breast. If using bacon, wrap each breast with 1 to 2 pieces of bacon and arrange in baking dish.
  6. Bake uncovered for 35 - 40 minutes or until chicken is cooked through.
  7. If desired, broil chicken breasts for 5 to 10 more minutes to brown bacon.
