The mixture my mother used was hamburg, egg, bread, spearmint, and onion. Perhaps you didn't use bread. My mother fried them. Later, my wife would bake them. None fell apart that I can remember.
The Orthodox Study Bible, the one with the OT and NT, has a good synopsis of the history of each of the gospels and the epistles. It is available from Amazon. There is a cheaper on line version. I didn't see it on Amazon but you can check. I find navigating within the on line version difficult.
Add hamburg, egg and sliced bread to a bowl. Add spearmint and parsley. Mix by hand. Pick up 2 inch balls. Fry in olive oil. That's what Ma did. Simple and simply delicious. :)
