Smelts and Atherina are actually not exactly the same thing. Smelts are the closest thing in the US to the Atherina but it's a different species of fish. It's like calling a fish caught off the coast of California, 'tsipoura' :) Close, but not exactly the same.

There is nothing authentic about baklava cheesecake. I say skip the cheesecake it's just a distraction, stick to a good old fashioned AUTHENTIC baklava. If your missing the cheese part, have it with a feta chaser haha
