I've been trying to cook more traditional Greek ladera dishes this summer, especially since the local farm stands and farmers markets are overflowing with beautiful fresh vegetables. Every week something different catches my eye, and I'd love to make the most of what's in season rather than following the same recipes over and over.

For those of you who cook Greek food regularly, which vegetables do you always grab when they look especially good? Are there certain ladera dishes that really shine when tomatoes, zucchini, eggplant, green beans, peppers, or other summer produce are at their peak?

I'm hoping to build a list of go-to summer favorites that highlight fresh ingredients and authentic Greek flavors. I'd love to hear what you make every year and any family recipes or regional specialties you'd recommend!
 

Which Nuts Do You Use for Baklava?

I've noticed that outside of Greece, most of the baklava I come across seems to be made with walnuts. It's delicious, but every time I travel to Greece, I see much more variety. I've had baklava made with pistachios, almonds, and even combinations of different nuts depending on the bakery or the region.

That made me curious, what do people here use when making baklava at home? Is there a traditional choice in your family, or does it depend on where you're from? If you use a mix of nuts, what combination do you like best?

I'd also love to know if certain nuts are associated with particular parts of Greece or if it's simply personal preference. I'm always looking to try something new, so I'd appreciate hearing what everyone uses and why. Feel free to share your favorite recipes or family traditions, too!

Traditional Greek Dishes Using Wild Greens

I enjoy collecting wild greens during the summer, and I’ve been looking for more traditional Greek ways to use them. I live outside of Greece, so I obviously don’t have access to all the same varieties of horta that grow there, but I can find quite a few edible wild greens locally.

I usually keep things simple and boil the greens, then serve them with olive oil and lemon. However, I know there must be many other traditional dishes that use wild greens. I’ve heard of hortopita and different regional pies, but I’d love to learn about soups, stews, rice dishes, or other recipes that incorporate them.

Which traditional Greek dishes use wild greens? Are there particular combinations of greens that work best for certain recipes? I’d also be interested in hearing how your family prepares horta or whether you substitute locally available wild greens when living outside Greece.

Should I be making my own phyllo?

I've been debating whether I should learn how to make my own phyllo from scratch. I know several people who never buy packaged phyllo—they make it fresh every single time they prepare spanakopita, tiropita, or other traditional pies. They swear the texture and flavor are worth the extra effort.

I've always used store-bought phyllo because it saves so much time, and honestly I've been happy with the results. Still, seeing homemade phyllo stretched so thin and baked until perfectly flaky makes me wonder if I'm missing out.

For those of you who make your own, do you think it's worth learning? Is it something that gets easier with practice, or is it a skill that takes years to master? I'd love to hear about your experiences, tips, and whether homemade phyllo has become your standard or if you still reach for the frozen packages sometimes.

Favorite Greek Dishes with Fresh Tomatoes?

Now that tomatoes are at their peak, I've been trying to think of more traditional Greek dishes that really let fresh, ripe tomatoes shine. Of course, horiatiki salad immediately comes to mind, but I know there have to be plenty of other favorites that make the most of summer tomatoes.

I'd love to get some ideas for dishes to make while good tomatoes are in season. They can be simple family recipes, classic village dishes, or something that's more specific to a particular region of Greece. I'm open to just about anything, whether it's a main course, side dish, or even an appetizer.

What are your favorite Greek dishes that feature fresh tomatoes? Are there any recipes you make every summer because the tomatoes are simply too good to pass up? I'd love to hear your recommendations.

Favorite Greek Foods from Childhood?

Do you have any Greek comfort foods that immediately bring you back to childhood? I have a few dishes that always have that effect on me. Avgolemono soup is definitely one of them, especially on a cold day or when I’m not feeling well. Dolmades are another, since they were always part of family meals and gatherings growing up. I also love yemista, which is still one of those meals that feels comforting and familiar every time I have it.

I’m curious what dishes have the same meaning for everyone else. Maybe it’s something your grandmother made, a simple meal you ate after school, or a dish that always appeared at Sunday dinners and holidays.

What Greek foods take you right back to childhood? I’d especially love to hear about some of the less obvious comfort foods and regional dishes that other families grew up eating.
