Now that the weather is getting warmer, I’ve been grilling fish more often, usually things like branzino, salmon, or whole dorade with olive oil, lemon, and herbs. The fish itself always turns out great, but I feel like I fall into the same side dishes every single time and could use some new ideas.

I usually do something simple like roasted potatoes or a Greek salad, which I love, but I’m curious what everyone else likes serving alongside grilled fish. Do you prefer lighter sides that let the fish stand out, or more filling dishes to make it a complete meal?

I’m especially interested in traditional Greek combinations if anyone has favorites. Things like horta, gigantes, rice pilaf, grilled vegetables, or even dips and spreads. I’d love ideas that feel fresh, summery, and Mediterranean without being too heavy. What side dishes do you always come back to with grilled fish?
 
Dandelion greens, just be careful you pick them from the side of a highway. The ones in your yard may have pesticides and you don't want them.
 
I always come back to lighter Greek sides with grilled fish because I like letting the fish stay the star. Horta is probably my favorite, especially with lots of lemon and good olive oil. It feels simple but somehow completes the meal.

I also love ladera-style vegetables in summer, especially green beans or briam served at room temperature. Grilled zucchini and eggplant with skordalia on the side can be really good too if you want something with more flavor. Another underrated one is lemon rice with fresh dill and parsley instead of a heavier pilaf.

If I’m grilling whole fish, I’ll sometimes just do crusty bread, fava, capers, sliced tomatoes, and a cold glass of white wine. That combination feels very Greek summer to me and never gets old.
 

Best Ladera Dishes for Summer?

I've been trying to cook more traditional Greek ladera dishes this summer, especially since the local farm stands and farmers markets are overflowing with beautiful fresh vegetables. Every week something different catches my eye, and I'd love to make the most of what's in season rather than following the same recipes over and over.

For those of you who cook Greek food regularly, which vegetables do you always grab when they look especially good? Are there certain ladera dishes that really shine when tomatoes, zucchini, eggplant, green beans, peppers, or other summer produce are at their peak?

I'm hoping to build a list of go-to summer favorites that highlight fresh ingredients and authentic Greek flavors. I'd love to hear what you make every year and any family recipes or regional specialties you'd recommend!

Which Nuts Do You Use for Baklava?

I've noticed that outside of Greece, most of the baklava I come across seems to be made with walnuts. It's delicious, but every time I travel to Greece, I see much more variety. I've had baklava made with pistachios, almonds, and even combinations of different nuts depending on the bakery or the region.

That made me curious, what do people here use when making baklava at home? Is there a traditional choice in your family, or does it depend on where you're from? If you use a mix of nuts, what combination do you like best?

I'd also love to know if certain nuts are associated with particular parts of Greece or if it's simply personal preference. I'm always looking to try something new, so I'd appreciate hearing what everyone uses and why. Feel free to share your favorite recipes or family traditions, too!

Traditional Greek Dishes Using Wild Greens

I enjoy collecting wild greens during the summer, and I’ve been looking for more traditional Greek ways to use them. I live outside of Greece, so I obviously don’t have access to all the same varieties of horta that grow there, but I can find quite a few edible wild greens locally.

I usually keep things simple and boil the greens, then serve them with olive oil and lemon. However, I know there must be many other traditional dishes that use wild greens. I’ve heard of hortopita and different regional pies, but I’d love to learn about soups, stews, rice dishes, or other recipes that incorporate them.

Which traditional Greek dishes use wild greens? Are there particular combinations of greens that work best for certain recipes? I’d also be interested in hearing how your family prepares horta or whether you substitute locally available wild greens when living outside Greece.

What's the secret to great moussaka?

I've been cooking more traditional Greek meals lately, and I've really started to appreciate ladera dishes. There's something so comforting about vegetables slowly cooked in olive oil, tomatoes, herbs, and simple ingredients. They may not be flashy, but they're some of the most satisfying meals in Greek cuisine.

Tips for Making Homemade Loukaniko?

I’ve been thinking about trying to make homemade loukaniko, and I’m finally ready to give it a shot. I have a KitchenAid mixer with the meat grinder and sausage stuffing attachments, so I think I have the equipment I need. Now I just need to figure out how to get the flavors right!

I absolutely love loukaniko grilled, especially when it gets a little charred on the outside and stays juicy inside. For those of you who make your own, what seasonings and proportions do you use? I know recipes can vary quite a bit depending on the region and family tradition. I’m especially curious about orange peel, garlic, oregano, fennel, and other spices.

Any tips on the best meat-to-fat ratio, casing size, or grilling method would also be appreciated. I’d love to get as close as possible to traditional Greek flavor!
