In another thread I asked about stifado spice blends... I have been looking into Geek spice combinations and I am wondering if clove and cinnamon are often used together in dishes, both sweet and savory, or if Greeks tend to use one or the other. The reason why I ask is in that thread, someone mentioned their family prefers cinnamon over cloves in their stifado. I have seen stifado recipes with either one, and some recipes do include both. The same is true for baklava and other sweet deserts. Sometimes people use both clove and cinnamon, sometimes it's one or the other - especially when it comes to the syrup.
I am trying to figure out if there is a mindset in Greek Culture that I need to learn about how to create spice combinations when I cook. I would love to hear your thoughts!
