I’m likely visiting parts of Northern Greece next year and realized how little I know about the food there compared to the islands. Most of my Greek food experiences have been island-based, lots of seafood, grilled dishes, simple vegetables, olive oil-forward meals, which I love.

But I keep hearing that Northern Greek cuisine is quite different: heartier, more meat-based, colder-weather food, stronger flavors, maybe more Balkan or Asia Minor influence. I’m especially curious about what people actually eat day to day, not just the famous dishes.

If you’re from Northern Greece or have spent time there, what foods should I expect to see regularly? Are there specific stews, breads, cheeses, or vegetable dishes that feel distinctly northern? And how different does it feel from island cooking once you’re there? I’d love to understand the regional food culture a bit before I go.
 
I’ve spent some time in Northern Greece, and your impression is pretty accurate, the food does feel noticeably different from island cuisine. It’s still very Greek, but generally heartier and more influenced by mainland climate and history. You’ll see more slow-cooked dishes, braised meats, legumes, and oven meals compared to the lighter grilled seafood focus on the islands.

Some things that showed up often day-to-day were fasolada, lentil soups, gigantes, and various meat stews, especially pork and beef in tomato or wine sauces. Sausages and cured meats are also more common in certain regions. Pies (pites) are everywhere, cheese pies, greens pies, pumpkin pies, often eaten as snacks or quick meals, but that's true for a lot of Greece. Breads can be more rustic and dense. Different cheeses can be worth trying took, it depends where you are.
 

Pasta to Use in Pastitsio

I love making pastitsio, but I keep running into the same issue when I shop for ingredients. The long, thick pasta that’s traditionally used (the tubular kind that helps the layers hold together so nicely) isn’t always easy to find where I live. Some stores carry it occasionally, but it’s definitely not something I can rely on being in stock.

Because of that, I’ve been wondering what other types of pasta people use when they can’t find the traditional kind. I’ve seen some recipes suggest substitutes, but I’m curious what actually works best in practice. Do you stick with another long tubular pasta like penne or ziti, or is there something closer to the traditional texture?

Favorite Greek Food You Grew Up With?

I’ve been thinking lately about the Greek foods that were just part of everyday life growing up — the things that showed up on the table without much discussion, but somehow became the strongest memories. For me, it wasn’t always the big holiday dishes. It was the simple stuff: baked casseroles, roasted meats, lemon potatoes, lentil soup, bread with olive oil, things like that.

Now that I’m older, I realize how much those foods were tied to family routines and culture, not just taste. Some of them I still make. Some I haven’t had in years.

Favorite Greek lamb dishes?

I’ve always felt like lamb is one of the ingredients that really defines Greek cuisine. There’s something about the combination of herbs, lemon, garlic, and slow cooking that just works. I tend to default to classics like roasted lamb with potatoes or souvlaki, but I know there are a lot of regional dishes and traditional preparations I probably haven’t tried yet.

I’m especially curious about dishes people grew up with or recipes that have family connections. Do you prefer slow-roasted styles, grilled preparations, or something more rustic like stovetop or braised dishes? And are there any lesser-known lamb recipes you think deserve more attention?

If you cook lamb at home, I’d also love to hear your favorite seasoning approaches or techniques for keeping it tender and flavorful.

Simple Greek Lentil Soup Recipe

I make lentil soup a lot this time of year especially since this is a pretty big fasting period (lent). I thought I'd share my recipe!

Ingredients
  • 1 cup brown lentils
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped (optional but common)
  • 1 bay leaf
  • 2–3 tbsp olive oil
  • 1–2 tbsp tomato paste (optional)
  • 4 cups water
  • Salt and pepper to taste
  • 1–2 tbsp red wine vinegar (for serving)
Instructions
  1. Rinse the lentils well under cold water.
  2. In a pot, add lentils and water. Bring to a boil and skim any foam.
  3. Add onion, garlic, carrot, bay leaf, olive oil, and tomato paste.
  4. Lower the heat and simmer for about 30–40 minutes, until the lentils are tender.
  5. Season with salt and pepper.

Regional Tiropita Variations?

I’ve been making tiropita the same way for years, and while I love it, I’m starting to feel like I’m on autopilot.

My go-to is a simple feta filling with a little egg and black pepper, layered in phyllo and baked until golden. It’s reliable and always a hit, but I know Greece has so many regional variations that I’ve barely explored.

I’ve heard that some areas mix in different cheeses like mizithra or kasseri, and others skip the phyllo altogether and use a more rustic dough. I’m also curious about versions that are spiral-shaped, pan-fried, or made as individual pies instead of a large tray.

For those of you who’ve tried tiropita in different parts of Greece, what stood out? Are there regional twists that completely change the flavor or texture? I’d love some inspiration to shake up my usual routine and try something new in my kitchen.
