I love doing Greek-style grilling at home, especially in the warmer months, things like souvlaki, grilled chicken, lamb, vegetables, and seafood with lots of olive oil, lemon, and herbs. It’s one of my favorite ways to cook because it feels simple but really flavorful.

I realized recently that I usually default to whatever wine I have on hand, but I’d love to start pairing more intentionally with Greek wines. There are so many interesting varieties now, and I’m curious what works best with grilled foods specifically.

For those who enjoy Greek wines, what would you recommend with different grilled dishes? For example, lamb vs chicken vs fish, or even grilled vegetables and halloumi? Are there certain white, rosé, or red varieties that really shine with that smoky, herb-forward flavor profile?
 
Assyrtiko is an excellent choice with grilled seafood and vegetables because its acidity balances olive oil and lemon flavors well. For lamb, Agiorgitiko or Xinomavro works nicely since they complement the richness and smoky notes. A dry Greek rosé can also pair beautifully with chicken souvlaki and halloumi, offering freshness without overpowering the dish.
 
Greek grilling and Greek wine are such a natural match because the flavors come from the same landscape. olive oil, herbs, smoke, lemon, and salt. For grilled fish or seafood, I love Assyrtiko. The acidity and minerality cut through the oil beautifully and handle the char really well. With grilled chicken or souvlaki, Moschofilero or a light Malagousia can work nicely, especially if there’s lemon involved.

For lamb, you really can’t go wrong with Agiorgitiko or Xinomavro. Agiorgitiko is softer and fruitier, while Xinomavro has more structure and earthiness that pairs great with smoky meat. Rosé from Xinomavro is also fantastic with mixed grills or vegetables.

Grilled halloumi and vegetables are surprisingly flexible, a dry rosé or even a light red slightly chilled works great. Honestly, Greek wines shine most when the food is simple and herb-driven, exactly like what you’re cooking.
 

"Forgotten" Greek Dishes to Try

I’ve been thinking lately about how easy it is to fall into a routine with Greek food. I make the usual things, grilled meat, salads, maybe a pie now and then, but it hit me that there are a lot of traditional dishes that used to be part of everyday life that almost nobody makes anymore.

I’m talking about the kinds of foods our parents or grandparents just handled without thinking. Homemade spoon sweets sitting in jars, diples made by hand during the holidays, preserves, syrups, things that actually took time and effort. Somewhere along the way those skills faded out, or people just stopped bothering.

It makes me wonder what else has quietly disappeared.

Do you have foods like that in your family history? Dishes you remember from childhood that you rarely see now? And which ones do you think are actually worth bringing back and making again?

Fasolakia with Frozen Vegetables?

I’ve always made fasolakia with fresh green beans, but recently I found out my cousin uses frozen ones, and I’m honestly a little skeptical. Part of what I love about fasolakia is the texture and the way the beans absorb the tomato, olive oil, and herbs during the long simmer. I keep thinking frozen vegetables might turn mushy or watery, or just not have the same flavor.

At the same time, I can see the convenience, especially when good fresh beans aren’t in season. So now I’m curious whether I’m being too rigid about it.

Has anyone here tried making fasolakia with frozen green beans? Did you change anything about the cooking method, like reducing liquid or cooking time? And did the final result still taste like proper fasolakia, or more like a shortcut version?

Making a Greek Salad with Lettuce?

Most people think that horiatiki doesn't have lettuce, but depending on the region, do you know that I have seem them with lettuce? I get the feeling that what we outside of Greece think of as horiatiki isn't white it. When I go to Greece in the height of summer, it doesn't have lettuce. When I go outside of that, it might have lettuce. What is actually going on here?

That being said, I often see a "Green Salad" on menus. And a variation of cabbage salad, similar to the kind I make at home, but at home I only use cabbage and in Greece I see it with other ingredients like shaved carrots. I have even seen Greek cabbage salad served on a bed of lettuce! What is actually going on here? What is the real story with lettuce usage in Greece?

Favorite Greek Food You Grew Up With?

I’ve been thinking lately about the Greek foods that were just part of everyday life growing up — the things that showed up on the table without much discussion, but somehow became the strongest memories. For me, it wasn’t always the big holiday dishes. It was the simple stuff: baked casseroles, roasted meats, lemon potatoes, lentil soup, bread with olive oil, things like that.

Now that I’m older, I realize how much those foods were tied to family routines and culture, not just taste. Some of them I still make. Some I haven’t had in years.
