Im not a huge fan of ground beef sometimes and I like to switch up the types of protein that I use. Has anyone tried making pastitsio or gemista with pork or lamb for example? How was it?

I would say yes! My Yiayia would always use a blended mix of park, beef and sometimes lamb in many of her recipes.

I have made Greek style burgers before using 2 lbs beef, 1/2 lb pork and 1/2 lb lamb (with salt, pepper and oregano)...that is an amazing burger! 🇬🇷 🇬🇷

I am always mixing up meats when I cook, and I don't just use beef. I know a lot of recipes in the US call for beef, but as far as I can tell, this isn't traditional in Greece. So instead, I have a Greek mindset of using whatever is available and fresh, and I try to work in lamb and pork whenever I can.
 

How to spruce up your leftover keftedes!

I always find myself having leftover meatballs or keftedes need a bit of sprucing up the next day. What I like to do is make a tomato sauce with wine, and heat up the meatballs with the sauce so that they soak it up and don't stay dry. This is the recipe for the sauce

- sauté one onion and two garlic cloves with olive oil
- add half a jar of tomato paste
-add cumin, black pepper, ground clove and basil
-after all the spices have been cooked, add one cup of red wine
-once the wine is bubbling, add one jar of tomato sauce
-cook for about 20 minutes over medium heat

What is the best Greek dish to bring to a potluck?

Hi everyone, I was invited to my office's potluck in two weeks and I am trying to figure out what to bring. Everyone in the office really likes Greek food, and we usually go to a Greek restaurant down the street for dinners with clients. Does anyone know what would be a good dish to bring to a potluck? Probably something that's easy to cook because I don't tend to cook a lot of Greek food at home. Thanks!

How to make juicy Greek style lamb burgers!

This is one of my own creations that is so tasty! I'm not really the type to measure, so please take my advice with a grain of salt and use whatever measurements you feel comfortable with or that you find online. I like to make my lamb burgers with lean ground lamb meat. I find that lamb meat is pretty fatty and stays moist and doesn't need to have a high percentage of fat. I season the meat with salt, pepper, oregano, and rosemary. As an extra plus, I like to stuff the burgers with feta cheese or halloumi. The key here is not to overcook them because the meat will dry up and so will the cheese. For toppings, you can pretty much add whatever you like, I like sautéed onions and red peppers.

Its grilling season!

I’m so excited! This is the first day that I’ve been able to get outside and start grilling. I made some chicken, pork chops, and beef tenderloin seasoned with lemon and oregano. Is anyone else grilling this summer? 😎

Soft and tender Greek lamb shank

I love making this tender lamb shank anytime I have a special occasion. While you can cook lamb shake in many different ways, I like to go sit in the oven just until the outside gets a nice darker color and some of the fat renders off. Of course, you should always serve this with either rice or potatos.
