I am trying to learn about Greece and how to conduct myself while there. I found this video. What do you guys think? Is there a lot of truth to what he has to say?

It's all pretty accurate. Much of what he covers has to do with things you would encounter if you go to places less frequented by visitors.

One omission- think about attire if you go to a religious shrine, monastery or church. You might be denied entrance if outfit is too revealing.

Good Greek Recipes for Fall

Summer is (sadly) behind us and now I am starting to experiment with some foods that seem more appropriate for this time of year. Since I am getting more comfortable working with phyllo I thought I would try pita with squash. I found this recipe a little bit ago:

Thought I would also try to make this:

I tend to like heavier food at this time of year.

Does anyone else have any suggestions of dishes I should try?

Greek American Thanksgiving Rice/ Hamburg Dish?

My family makes this dish and I am trying to recreate it and maybe even try something different... I know it might take me a while to nail down my technique before Thanksgiving, and I will even want to do at least one test run.

As far as I can tell this is basically the technique:

Sauce one chopped onion
Brown the hamburg
Add salt, pepper, and spices (I think my family uses allspice?)
Stir in the rice
Add water
Cook it.
Stir in roasted chestnuts.

As you can see, I don't know amounts or timing. Can someone help me recreate it?

Could I Use Different Greens in My Pita?

The there day, I tried to follow a spanakopita recipe that I actually shared here, and I ran out of spinach! So, I actually ran down to the store to get some. However, I had kale on hand, and I wondered the whole time I was driving if I should have just used the kale. I didn't need much more spinach - just a few handfuls.

What do you think? What would you have done? I already mixed the filling otherwise I would have just put everything in a smaller pan.

Gluten Free Moussaka?

I am going to a dinner party where the hostess is gluten free. I thought I would try making this and bring it to her house. What do you guys think of it?

I have made regular moussaka with gluten, so I think I will be okay with this (I am kind of new at cooking Greek food).

Making My Own Phyllo?

I have been having trouble with frozen phyllo - it sticks when I take it out of the package. I will try to switch to a different brand, but I am wondering if I should actually give making my wn phyllo a try? Do you guys have any tips for me?

I found this recipe - does it look good to you guys? I have never done this before:
