Magiritsa is a very special dish that is eaten at midnight on the Saturday before Easter. This is the first meal with meat that many Greeks have after fasting for 40 days, and it's filled with all types of meat! It may be pretty strange to those who aren't used to eating different parts of the animal, but it tastes super great. You can always substitute with any other parts of the animal and use beef instead of lamb for example.
