I’ve never been a fan of béchamel. The texture and heaviness just don’t do it for me—even though I know it’s a classic part of moussaka. That said, I really want to try making a version of moussaka without the béchamel topping. Has anyone tried this before? Is there a good substitute that still gives that nice “top layer” without the creaminess of béchamel?

I’ve heard of some people using mashed potatoes or even a simple tomato-based topping instead. Others have mentioned using yogurt or cheese as a lighter alternative. I’d love to hear if anyone has experimented with different versions and how they turned out—did it still taste like moussaka?

Also, does skipping the béchamel affect how the layers hold together or how it bakes? Any tips, tricks, or favorite recipes would be much appreciated. Thanks in advance for your suggestions!
 
I’m not a huge fan of heavy béchamel either, and I’ve experimented with a few béchamel-free moussaka variations that still turned out delicious! One of my favorite alternatives is a thick Greek yogurt mixed with egg and a bit of grated kefalotyri or parmesan. It bakes into a light, golden top that still feels satisfying without being too creamy or rich. I’ve also tried a mashed potato topping—especially good if you make it garlicky—but it makes the dish feel more like a Greek shepherd’s pie than traditional moussaka.

Another trick: layer thin slices of tomato over the top with a sprinkle of cheese. It gives a nice roasted finish and keeps the dish cohesive. Skipping béchamel does slightly affect how firm the layers stay, so I recommend letting it cool a bit before slicing to help it set. Would love to hear more ideas too—this is a fun one to play with!
 

Do you make gemista with or without meat?

I grew up eating Gemista both ways, and now I’m realizing how divided people are on this. In my family, we usually made them without meat with just rice, herbs, and lots of olive oil, but I know plenty of people who swear they’re not really gemista unless there’s ground meat in the filling.

Lately I’ve been wondering what’s actually more traditional, or if it just comes down to region and family habits. I love the lighter, oil-based version, especially in the summer, but I can see the appeal of the heartier meat version too.

Sharing Greek Food with Friends - Recommendations?

I’m having a few friends over for dinner soon, and none of them are Greek, so I thought it would be fun to make a full Greek-style meal for them. I grew up with Greek food, so a lot of dishes feel “normal” to me, but now I’m realizing I’m not sure what works best for people who didn’t grow up eating it.

I definitely want to include a few traditional dishes, but I also don’t want to overwhelm everyone with too many things at once. I was thinking maybe spanakopita, souvlaki, Greek salad, rice, and some kind of dessert like baklava or galaktoboureko. I’m also wondering if there are certain dishes that tend to be crowd favorites with people who are newer to Greek food.

Most common Greek soups people make at home?

Moussaka or Pastitsio without Bechemel?

Best Grill for Souvlaki?

I was reading something earlier and somehow ended up in a completely unrelated debate about grilling souvlaki, which got me thinking.

We started talking about what actually makes it taste better. One person was saying gas grills are just as good and much easier to control. I can understand that, but I’ve always leaned toward charcoal because it feels like you get more flavor from it. Then someone else chimed in and said charcoal is the way to go, but only if you’re using wood-based or natural briquettes.

Now I’m curious what people here think, especially those who make souvlaki often.

Do you notice a real difference between gas and charcoal? And if you use charcoal, does the type actually matter to you?
