Keftedes are one of those foods that always remind me of family gatherings. Everyone seems to make them a little differently, but this is the basic version my family has always used.

For about a pound of ground beef, we add one small grated onion, a handful of chopped fresh parsley, a little fresh mint, one egg, breadcrumbs, salt, pepper, oregano, and a small splash of red wine vinegar. Sometimes we add a little grated garlic as well.

The important part is mixing everything well and then letting the mixture sit in the refrigerator for a little while before shaping the keftedes. We make them fairly small, roll them lightly in flour, and fry them in olive oil until browned on the outside and cooked through.

We usually serve them with lemon, potatoes, salad, or tzatziki.

Favorite Greek dishes made with zucchini

Zucchini seems to show up in so many Greek dishes, especially during the summer when it’s plentiful and at its best. I’m curious what everyone’s favorite traditional Greek zucchini dishes are.

Kolokithokeftedes are probably one of the first things that come to mind for me. I love how the zucchini works with herbs, feta, and a little crispiness on the outside. I also enjoy zucchini in vegetable dishes like briam, and I know there are plenty of regional recipes that use it in different ways.

What Greek zucchini dishes do you make most often? Do you prefer zucchini fritters, stuffed zucchini, baked dishes, stews, pies, or something else entirely?

I’d especially love to hear about family recipes or regional dishes that aren’t as well known outside Greece. And if you grow zucchini yourself, what do you usually make when you suddenly have more than you know what to do with?

Favorite Greek dishes from childhood?

What are some of your favorite Greek dishes from childhood? I always find it interesting how certain foods can bring back such specific memories of family, holidays, Sunday dinners, or time spent with grandparents.

For some people, it might be something comforting like avgolemono soup, pastitsio, or moussaka. For others, it could be something much simpler, like bread with feta, horta, fasolakia, or a particular pie that someone in the family always made.

I’d especially love to hear about dishes that were common in your household but maybe aren’t as well known outside your family or region of Greece. Were there foods you didn’t appreciate much as a child but love now? Or dishes you still make exactly the way your mother or grandmother did?

What Greek foods immediately take you back to childhood, and what memories do you associate with them? Are there any family recipes you’ve made sure to keep alive?

What Greek Foods Do You Start Craving in the Fall?

I've been thinking more about seasonal eating lately, especially from a Greek perspective. Summer Greek food feels so naturally tied to the season with tomatoes, zucchini, eggplant, fresh herbs, grilled foods, and plenty of fruit. But once the weather starts cooling down, I find myself wondering what traditional Greek foods really feel like fall.

Are there certain dishes you start making as soon as September or October arrives? I'm thinking of foods like fasolada, giouvetsi, trahana soup, baked dishes, savory pies, and recipes using apples, grapes, walnuts, chestnuts, pumpkin, or other fall ingredients.

I'd especially love to hear about foods that were seasonal in your family rather than dishes you ate year-round. Were there certain meals your yiayia or parents always started making when the weather changed?

Do You Put Cinnamon in Your Keftedes?

I’m curious how everyone here makes keftedes, especially when it comes to cinnamon. I know some Greek families add a little cinnamon to the meat mixture, while others would never think of putting it in.

In my experience, even a small amount can change the flavor quite a bit. It gives the keftedes a warmer, slightly sweeter spice in the background, but I can also see how it might not be for everyone. I’ve had versions that lean more heavily on oregano, mint, parsley, garlic, and onion instead.

Do you put cinnamon in your keftedes? If you do, how much do you usually use, and was that something your family always did? I’d also be curious to know if it varies depending on what part of Greece your family comes from.

Would love to hear how everyone seasons theirs and what you consider essential for really good keftedes.

What is your favorite meat to cook on the grill Greek-style? I always think Greek grilling is at its best when the seasoning is fairly simple and the flavor of the meat still comes through.

Lamb is probably the first thing that comes to mind, especially chops seasoned with olive oil, lemon, oregano, garlic, salt, and pepper. Pork souvlaki is another favorite, and chicken can be excellent when it has had enough time to marinate. I also really enjoy biftekia on the grill, especially when they are seasoned with herbs and served with lemon potatoes, salad, or grilled pita.

I’d love to hear what everyone else prefers. Do you usually grill lamb, pork, chicken, sausages, or something else? Are there any particular marinades, seasonings, or family techniques you always use? And what sides do you normally serve with a Greek-style grilled meal?
