I need some tips for making Greek fries. My family tends to soak the potatoes in water for about ten minutes after slicing the fries. I haven’t done that, and something is off about my fries.

Do you think this really makes a difference? My fries are soggy, so it could be something else, or this could be part of the issue.

I think soaking them in cold water removes some of the starch. That’s how my family does it too.

Same! We soak the potatoes, as well.

However, the sogginess could be from something else. It could be because you put the fries in the oil when it wasn't hot enough. The oil needs to be the right temp, otherwise the fries will just absorb the oil and not get crispy.

Easy Saganaki Recipe

I thought I'd share a simple method for how I make saganaki. I have had different versions of this, I honestly like other versions better, but this is the easiest for me to do!

I slice one of these cheeses thick:

Kefalotyri, Graviera, or, Kefalograviera

Then I dip it in water on each side and coat it in flour that had been seasoned with salt and pepper.

I add olive oil to a small frying pan and set the heat on medium high. When the oil is hot I add the cheese. Basically, I sear it like I would anything else and serve it hot. It's fast and easy and a crowd pleaser - I do this when I have company.

I have never doused it in Ouzo and set it on fire like they do in restaurants, I am legitimately concerned I might burn my hair or something! Should I add this step, though? I could always tie my hair back...

Greek foods for September / October?

What do people traditionally eat in Greece in the months of September and October? Is it still sort of a summer growing season right now? I have a friend who just got back from Greece and said the markets were packed with all veggies and fruits we traditionally think comes from the summer months. She was in Crete and saw a lot of tomatoes, summer squash, other types of squash... she thinks she may have seen some pumpkins too.

Is this normal or is Crete on a different growing season since it is further south?

How do you make your cabbage salad?

I love Greek cabbage salad. My family makes it very simply with cabbage and a ladolemono. I add feta cheese because, why not LOL.

I have had other versions with other veggies and a different seasoning - like one version I had blended cabbage with carrot and had an apple cider vinegar dressing.

How do you guys do it?

Greek Dishes that Use Hot Pepper?

I love hot pepper. I am having some buddies over to watch football over the weekend and I want to serve some Greek foods that are on the spicier side. What do you suggest?

I know the roasted red pepper and feta dip has hot pepper. I can't think of anything else. Of course I could also grill and add some hot pepper to the Greek marinade I use. It tastes pretty good. Can you think of anything else?

Syrup Variations for Baklava

I have been talking to people who all make their baklava syrup different! I make mine with some honey, sugar, water, and cinnamon. How do you make yours? Here are some variations I bumped into:
  • Just sugar and water
  • Sugar, water, and spices like cinnamon and/or cloves
  • Syrups that have a squeeze of orange
  • Syrups that have a squeeze of lemon
  • Syrups that use cinnamon, cloves, allspice etc - all of them, or just one of them
Do the variations depend on the region of Greece it originated? Or does it really just depend on the family?
