It's no secret that beans are one of the healthiest ways to get your protein in! And if you are fasting for lent, they are a great option too tay full and energized. You can always substitute these ingredients for anything else that you have at home or available at your supermarket, don't feel constricted by these options! For the salad, all you need to do is mix the following
1. 2 cups cooked chickpeas or navy beans (you can also use canned)
2. 3 tablespoons olive oil
3. Half red onion chopped
4. 1/2 bunch parsley chopped
5. 2 Green peppers chopped
6. 1/2 cup kalamata olives
7. Salt, pepper and oregano to taste!
