I stumbled across this video and thought everyone on the forum would enjoy it. Preserving and learning about traditional methods of cooking and making food are extremely important. I worry that many of these practises are dying off in our cultures as mass produced food is becoming more and more popular around the world. Let's try and keep some of these traditions alive, because nothing taste better than homemade feta from the village.

This video was fantastic, I am so fascinated with the way the Greek people know how to do things like this.
 

Traditional Foods of Corfu?

I am headed to Corfu soon in early July and I am so excited! I have never been. I want to sample traditional foods. In most of Greece, some dishes were similar no matter where you go, and then there are some regional specialties.

Are there any regional specialties I should look for in Corfu?

Walnut cake fell apart - help!

I found an old recipe for Greek walnut cake in my family's recipe files. Something had spilled on it, it was written in pencil, and I couldn't read the writing that well. So, I cross referenced the recipe with recipes I found online.

Well, the cake didn't hold together. It was crumbly and completely fell apart when I put my fork through it.

Although I would like to know why, I think my best way out of this situation is to try again with a foolproof recipe I know WON'T fall apart, and then maybe I can reverse engineer what happened and rewrite my family recipe! Any suggestions?

Grilling Keftedes?

I love to grill and I am planning to cook some souvlaki. Also on the menu for my little gathering this weekend are keftedes. Is it possible to grill them? Should I put them on skewers or on a grill pan in order to do this? I usually just fry them but it's been hot so I want to minimize how much is being done in the kitchen.

Greek "Dips" for a Barbecue

I am serving a lot of Greek foods at a barbecue I will be hosting next month. I am starting to plan the menu now. There will be on the grill- lamb chops, chicken souvlaki, and loukaniko. There will also be Greek salad, fasolakia, and other miscellaneous dishes (I am not sure what yet). I like to have some dips and spreads laid out, both to accompany the grill foods, and to serve with bread.

Any advice? Definitely tzatziki, but was thinking of having something else, like kopanisti- but the issue with that is I am not sure I want to leave that outside.
