For Greek baking, it's all about quality ingredients, like authentic Greek olive oil.

It also depends on the bread - sweet breads like Tsoureki require a lot more precision and they need to rise enough to be fluffy.

A warm environment in the kitchen is the key to a good rising for all breads.

Don't be afraid to work the dough for other breads, like traditional Greek white bread or country bread.
