When I cook Greek dessert recipes, I tend to use whatever honey I have in the house. I've never really thought about it. Now, I am wondering if everything will taste better if I take the time to track down some Greek honey. Do you guys notice much of a difference? I am getting ready to start my holiday baking and I will be doing at least melamakarona and baklava, both of which I believe I need honey for?

In my experience if it isn't Greek honey, I tend to find local, unfiltered, raw sources. So, I go out of my way to find a farm. To me, the local honey tastes the best - unless I can find honey from Greece, which is on another level.

Greek honey is very different to all the honeys I have tasted from different countries.....we have a Royal organic honey farm here where the bees 🐝🐝 are really nurtured and taken care of ....can taste all the different flowers 🌺🌹 from where the bees have been traveling.... They can travel long distances....The honey from Crete and Peloponnese are the best!...... Greek honey is much thicker and strong in taste.... ideal for your baking.... Please send us some baklava to taste!....😂.... Kalley Mera from Thailand!

I totally agree- Greek honey really is special and it is worth it to find some. If you can't find Greek honey locally you can buy it online. I can even buy it on Amazon sometimes.

It is ok if you can’t find greek honey for your greek pastries. Even though it might taste better for you and I since we have been accustomed eating and baking with it, you can definitely substitute any other good local honey.
 

Greek Thanksgiving "Stuffing" Recipe?

Thanksgiving is coming up, and I am trying to track down a recipe. I had a Greek friend verbally describe what this is, but I need a recipe to follow if someone can help me out. His family recipe involves:
  • Onion
  • Ground beef
  • Rice
  • Water or broth
  • All spice, cinnamon, oregano (I thought he said oregano but I am not 100%)
  • Roasted chestnuts
I think maybe I can guess that the onion is sautéed, the ground beef needs to be browned, the rice is stirred in and water or broth is added, and the chestnuts are roasted separately and stirred in at the end?

Thanks for your help! I am learning that Greek cooks have most of their recipes in their brains.

Recipes list for Greek holiday cooking

I want to experiment making some traditional Greek dishes over the holidays. While I am learning how to cook Greek foods, I am also getting to know the culture. So, what do people typical cook during this time of year? I have done some research and made a quick list:

** There's a Greek "stuffing" type of thing that involves chestnuts to serve at Thanksgiving - I am having a tough time tracking down a recipe

** Melamakarona - the Greek Christmas cookie

** Other Greek desserts seem pretty common this time of year, too - baklava, koulourakia, kourabedies

** Braised lamb shank - Greeks in the United States, from what I can tell, tend to cook Turkey - but this lamb shank recipe has come up as an option for Christmas dinner

Did I miss anything? I was thinking of making the Melemakarona cookies, and maybe learning how to make lamb shake and that "stuffing" (if I can find the recipe). I will do some other things if I have time, but these are the main ones.

I want to make Domatakeftedes at home...

I saw a recipe in a Greek cookbook somewhere called "Domatakeftedes" or tomato croquettes. It looked delicious, but I can't find it!

Does anyone know of any good recipes? I love tomatoes, and I had this dish once somewhere and thought it was amazing. From what I understand it's a specialty on Santorini? Thanks for your help!

Favorite Greek winter desserts or cookies?

I love to bake in the winter and now with Christmas coming up, the urge is even stronger. I do plan to make melamakarona and baklava but I want to try one other thing. Maybe something like a spice cookie? I recently had something that was like a kouoloraki but it had a different texture and used a lot of spices. Does anyone know what that is? It's spiced with clove, cinnamon, maybe something else too.

Grilled Branzino Recipe from Cooking Greek Cookbook

When I visit Greece, one of the dishes I love is to order grilled fish. Seafood is plentiful in Greece! Branzino is one of my favorites. However, when I am not in Greece, it's really hard to find this dish. So, I decided to learn how to make it. I found a great recipe in the Cooking Greek Cookbook. I took a pic and would like to share it with you! This is the traditional way it's made. In one of the tavernas I went to, they let me watch them cook for a while, and this looks very close to what they did.
