    Souma is the Rhodian version. I bought a bottle from a roadside stall and it was crazy stuff. I ended up cooking it with roast plums to burn off some of the alcohol.

    Being vegan I don’t have too many dishes that potatoes would be served with, but I’ve had them with gemista, stifado and other adapted traditional dishes, and recently had fries made from hand cut potatoes rather than the processed version. They always taste beautiful.

    I didn’t know about salting them, I just grate them, put them in a tea towel and squeeze them as hard as I can. I save the juice to drink, it’s nice with a drop of gin cocktail 🍸😉
