I’m craving melitzanosalata but I’ve never made it before and I’m looking for a simple, authentic recipe. I know there are different ways to make it depending on the region, but I’d love something that brings out that smoky eggplant flavor without too much fuss.
Do you roast the eggplants whole in the oven or grill them? Some recipes say to peel them, others don’t—what’s the best method for a creamy texture? And how much garlic is too much?
Also curious—do you add yogurt, lemon juice, vinegar, or just olive oil and salt? I’ve seen versions with tahini too. I've had all kinds of different versions and liked them all.
