I like to make dishes like this during this time of year. It's great for lent, but even if I'm not fasting, it's also really healthy. Here's the recipe I use.
Ingredients:
- 2 cups cooked white beans (cannellini, navy, or Great Northern)
- 1 small red onion, finely diced
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- ½ cup Kalamata olives, sliced
- ¼ cup crumbled feta cheese (optional)
- ¼ cup fresh parsley, chopped
- 1 tbsp fresh dill or oregano, chopped
Dressing:
- ¼ cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp red wine vinegar
- 1 clove garlic, minced
- ½ tsp dried oregano
- Salt & pepper to taste
Instructions:
- Prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, vinegar, garlic, oregano, salt, and pepper.
- Assemble the salad: In a large bowl, combine beans, red onion, tomatoes, cucumber, olives, feta, parsley, and dill.
- Dress and toss: Pour the dressing over the salad and toss gently to coat.
- Let it rest: Allow the flavors to meld for at least 15 minutes before serving to let the flavors meld together.
