One of the most confusing things about using Greek recipes when you don't live in Greece is the massive differences in the ingredients. For example, you have to be very careful in which types of milk that you are using. Most Greek recipes just say "milk" but they mean whole milk. In countries outside of Greece, you may find that people often drink and cook/bake with skim milk. If you want your cooking and baking to come our perfect, try and use whole fresh milk every time except for when the recipe uses evaporated milk!! When using evaporated milk, try and use Nounou (most popular Greek brand) or Carnation (US brand).
