Avgolemono is a classic sauce that can be added to pretty much everything but taste the best on dolmadakia! The recipe is pretty simple, but takes a bit of practice to get the consistency right. All you need for ingredients is eggs, lemon, and chicken stock. It's kind of similar to a hollandaise sauce, but a bit more tangy. Here's how I make it.
- Whisk 2 room temperature eggs in a bowl
- Slowly pour in the juice of 2 lemons
- Add warm chicken soup stock until you reach the desired consistnency (I like mine pretty thick)
