Zucchini fritters are an excellent and a very healthy dish to make during lent! They're very simple and they're loved by all, and when you eat them you really don't feel like you're missing out on meat. The trick is to make sure that all of the moisture is out of the zucchini so that the patty is able to form and be sturdy enough to cook in the oil. If you're not eating cheese during lent, you can sub out the cheese for breadcrumbs, or vegan cheese.
