Be aware! Many Greek recipes use powdered vanilla instead of vanilla extract as they do in many other places around the world. Using a different type of vanilla can change the chemistry of your dessert and also make the vanilla flavor too weak or too strong, depending on what type of vanilla you’re supposed to use. I find that some brands of vanilla powder are super strong and you will only needed use a little bit. You can find powdered vanilla at any Greek grocery store!
