What are your favorite Cretan dishes

My must try local Cretan dishes are dakos, sarikopitakia, fried snails, kalitsounia and gamopilafo!! What are yours?

You should definitely try Dakos when in Crete. Although it has been described as "Greek Bruschetta" that doesn't really do it justice. You need the right "rusk", ripe tomatoes, Cretan olive oil, and that Cretan cheese that is like feta, but isn't. Here's a recipe, but Feta is in the recipe rather than the "Cretan cheese that is like Feta, but isn't" because that cheese is hard to find outside of Greece:
