I’ve been trying to make Youvarlakia (Greek meatball soup), but I keep running into the same issue—my meatballs fall apart when cooking! I follow a traditional recipe with ground beef, rice, egg, and seasonings, but no matter what I do, they don’t hold their shape in the broth.
I’ve tried chilling the meat mixture before rolling and even making the meatballs a bit firmer, but they still break apart. Should I use a different type of rice? More egg? Less liquid? Or is there a special technique to prevent this?
I’ve seen some recipes mention rolling the meatballs in flour before adding them to the soup—does that really help? Any tips or tricks would be much appreciated! I really want to master this dish without ending up with a pot of broken meat pieces.
