I made pastitsio for a Greek party last weekend!

This looks fantastic! For me, pastitso is all about he Krema - it is tricky to get it right. It looks like you have gotten it right!!! When my yiayia passed away, "the touch" that she had with the Krema passed with her. I feel like we are finally close to replicating.

Simple and healthy Greek roasted veggies

Yes they do! I saw chives growing in pots on balconies. It kind of looks like regular lawn grass, but it has a slight oniony flavor. Chives are best used as a garnish.

Simple and healthy Greek roasted veggies

I agree, and I sometimes use chives instead if I have those. But, I like the taste of scallions in this much better.

Simple and healthy Greek roasted veggies

I saute a chopped onion or (or I use a half a chopped onion if I don't have a lot of vegetables to use) and then add the vegetables, a little water, and either some chopped tomato or a little tomato sauce or tomato space. I always season it with some oregano. If I have them, I stir in chopped...

Family recipe for Greek style tomato paste

Many Greek recipes use tomato paste, like fasolakia (green beans). I also sneak a little bit in my lentil soup (fakes). You can also add some water and turn it into a tomato sauce. I sometimes even put a little in my pastitsio when I am cooking the ground beef!

What is your favorite Greek yogurt brands

I have a Greek store near me and they make their own yogurt. I highly recommend this approach if you have a store near you! Otherwise, I like the Fage brand the best.

How to make Greek fusion nachos

I love this idea! You can also use chopped bell peppers, which are popular in Greek cuisine. A meltable Greek cheese like Kasseri is a good choice in something like this, too, and you can also use mozzarella. I top mine with a lot of oregano! You can even use pita chips instead of tortilla...

Ekmek kataifi is the best refereshing dessert for the summer

I am totally obsessed with Ek Mek. I have never made it myself, but I love it when I bump into this. Had my first exposure at a Greek festival. My family never made it, but one day I might learn how to make it. If I want to eat it, I might need to make it myself since it is difficult to find.

How can I make traditional spanakopita with thick dough?

You can use any homemade phyllo recipe that you have! I've seen versions with yogurt, others with just water. The key is to roll it out to the thickness that you want. On Crete, they make more of the turnover style like the recipe shared above from akispetretzikis. When I make a light, flaky...

Simple and healthy Greek roasted veggies

I do a version of this, except I tend to use oregano, fresh if I have it growing. I've also made "briam". On hot days in the summer, the last thing I want to do is roast vegetables in the oven, so I tend to gravitate towards making my vegetables on the stovetop. My favorite is to make them with...

    How to make kataifi

When I make Kataifi, I mostly use walnuts, unless I have almonds that I need to get rid of. Walnuts are my favorite, but then again, I am a stickler for tradition. Walnuts are the nut my family always uses, and I find that I prefer it. I have also used a combination of walnuts and almonds in a...
