I’m planning to make a classic Greek dessert (either galaktoboureko or baklava—haven’t decided yet!), and I could really use some advice on the syrup part. Specifically, when is the best time to pour the syrup over the pastry? I've heard different things—some say hot syrup on cooled pastry, others say the opposite.
Also, I want it to be really rich with syrupy flavor (that sticky, sweet goodness in every bite!)—but not soggy or mushy. I like when the phyllo stays a bit crisp on top but is soaked enough to taste indulgent.
If I’m making a 9x13 pan, how much syrup should I use? Some recipes say 1.5 cups, others go up to 3! What’s worked best for you?
Would love to hear any tips or exact syrup-to-pan ratios you swear by. I want to get this just right.
Thanks so much in advance!
