I tried making galaktoboureko the other day - I had made this recipe before but it had been a while.

The end result is that the custard/filling part was far too runny.

I followed the instructions exactly (or so I thought, recipe was hard to follow because it was hand written).

What could result in this? My first thought was too much milk. But I think something else might have been going on.
 
Did you use semolina or farina

Custard:
I use farina ( box with the blue boy)
I use 1 cup farina to 1/2 gallon whole milk
1/2 lb sweet butter
7 eggs
2 cups sugar
1 teaspoon vanilla
That’s the custard
 
It seems that your custard did not thicken up as it should have. You should definitely check to see you farina to milk ratio.
 
Do you think maybe you stopped cooking the custard prematurely before it got thick enough? I agree with Pemi that something might have been off about your custard.
 

Getting souvlaki tender?

How do you make tender Greek souvlaki? I've attempted various recipes, marinated for different durations, and experimented with both high and low cooking temps, but I seem to be missing the mark for that mouth-watering tenderness commonly found in authentic Greek souvlaki.

Has anyone found a particular method or ingredient that makes a significant difference in achieving that ideal tenderness?

I use ladolemono, a marinate it overnight in ziplock baggies (after I cut the meat in cubes) and then I add them to the skewers and cook them on the grill. I typically use chicken.

It's getting warm out and time to break out the grill! I am interested in how do Greek people in Greece grill? I've had so many delicious grilled foods in Greece, I am having a hard time getting the same flavors here in the United States.
