In another thread I was asking about cheesecake. Chef Pemi said that they prefer no bake cheesecake?

I find this interesting.

I went online searching for recipes but it's been hard and there is a lot of variety. Seems like they include cream cheese, Greek yogurt, vanilla extract?

Firstly, I didn't know that there was even cream cheese in Greece. Am I looking at the wrong sorts of recipes if it has cream cheese?

Mizithra cheese is creamy but I have no idea if it will taste good in a cheesecake! Might be worth a try.

List of Greek Coffee Drinks

I heard that Greeks have different coffee drinks from what we have. Question - can you go to a cafe and also get some of the coffee drinks we are used to, like a cappuccino or espresso?

Anyway, what are the popular coffee drinks of Greece?

Are there pumpkins in Greek cooking?

I have some pumpkins I want to cook with... I would love to experiment with using it in a Greek dish.

I know there is a type of pita that involves pumpkin. I have a recipe somewhere, so I do plan to try that.

Is there anything else you guys can think of? There has to be more!

Best Meat for Stifado?

Most of the stifado (Greek meat stew) recipes that I have actually call of rabbit. I live in the United States and it is actually difficult to find rabbit, unless you know someone who hunts. Not only that, but I don't care for rabbit.

I have a friend who uses either beef or lamb for her stifado. I preferred the beef version. I want you guys to weigh in - what do you think is the best meat for stifado? Once I pick a meat to use, can I use the same recipe, and just use whichever meat I pick instead of the rabbit that is in my recipe?

Food Tour of Greece?

I want to take a food tour of Greece, and I only really have time for one destination. Where do you suggest I go? Some possibilities:

- Stay in Athens the whole time
- Crete
- Ikaria
- Thessaloniki

Really, any place in Greece would be good I imagine! Is there a site that has actual guided tours? I know I could just go somewhere and eat and explore on my own, but I want to meet locals, maybe even cook with some people.

Do Greeks use sourdough starter?

I read in a cookbook that Greeks sometimes use a sourdough-like starter to make some of their breads.

I didn't realize this. Also, is this really true?

I do detect a bit of a "flavor" sometimes, like sourdough, when I am eating bread in Greece.
