I’m Greek, it is polite to use the formal (plural) form when speaking to certain people. While it always depends on the context and how the person prefers to be addressed, I recommend trying out the plural form and then seeing if someone objects or how they react to see if they prefer the informal way of addressing them. If you are speaking to someone older than you, someone you don’t know, if you’re in a professional setting I suggest using the formal way of speaking! Best of luck
