I posted in another thread that was interested in learning how to make my own sausage. As an update, I bought an attachment for my mixer and I figured out how to use it. I also know how t buy casings. I have been experimenting with other recipes and finally found a loukaniko recipe I wanted to try. The ingredients:
- 3 pounds ground pork
- 1 pound ground lamb
- 1 pound pork pork fat
- 3 tablespoons salt
- 1 teaspoon pink curing salt
- 2 tablespoons olive oil
- 4 whole leeks, chopped
- 8 garlic cloves, chopped
- 2 tablespoons freshly grated orange zest
- 1 tablespoon toasted and ground coriander seeds
- 1 tablespoon black pepper
- 2 tablespoons dried oregano
- 1/3 cup red wine, chilled
