Pasta salad is perhaps one of the easiest recipes to serve for dinner and then eat for lunch the next day! I like to use Misko orzo, because that's a Greek brand and I like to think that it tastes better even though I haven't actually done a taste test ahaha. This is how you make it...
1. Boil orzo pasta for 9 minutes so that it's al dente
2. Drizzle olive oil on the pasta and let the pasta cool
3. Chop up red onion, Kalamata olives, tomatoes, cucumber and green pepper
4. Season with salt, pepper and oregano and add a squeeze of lemon and feta cheese
5. Mix everything to combine!
