I thought I would take some time to share my method for making souvlaki.
First, I cut the meat into 1 1/2 inch cubes - I usually use chicken but have used pork, lamb, and beef, as well - and it's all been good.
Then, I make a classic ladolemono with olive oil, lemon juice, oregano, garlic, salt, and pepper.
I marinate the meat for at least 2 hours but I find I like them marinated for longer than that - maybe 6-8 hours if I can or even overnight.
Then, I remove them from the marinade and pat with paper towels. From there, I put them on skewers with vegetables - my favorite is to use onion and bell peppers.
I use a charcoal grill so I have no idea the grill temp.
