I think the problems with making homemade phyllo that I have been having have been my fault, not the recipe's. I suspect I have been overworking the dough. I mentioned in a previous thread that I have been having issues.

Just in case it is the recipe I have, though, can anyone share a good recipe with me?
 
I use a recipe that is close to this one, but at the moment I can't find mine!

  • 2 cups all-purpose flour, plus more for kneading
  • 5 teaspoons olive oil
  • ½ teaspoon salt
  • ¾ cup warm water
  • 2 teaspoons white wine vinegar
Out of curiosity, have you been using the vinegar or other acid? I omitted it once, and it was a disaster batch of phyllo.

Us? We are grilling a leg of lamb and serving it with lemon potatoes and fasolakia. For dessert we are doing some kind of a chocolate cake and of course koulourakia.
