This is definitely not super popular, but I think it might taste awesome because I love seafood. This is how you make it. You need to cook down the octopus with wine and then put it in-between phyllo as you would spanakopita.
- 2 pounds fresh octopus, cleaned
- 1/2 cup dry red wine
- 3 tablespoons Greek olive oil
- 2 large onions, chopped
- 4 garlic cloves, chopped
- 1 teaspoon dried red pepper flakes (optional)
- 1 pound fresh tomatoes, diced
- 1/2 cup fresh, chopped parsley
- 2/3 cup small grain rice, soaked in water for 10 minutes and then drained
- 1/2 teaspoon ground cinnamon (optional)
- Salt, to taste
- Melted Butter, for brushing (about 1 stick)
- 16 sheets phyllo
