Greeks love potatoes! And a summer potato salad is a great potato dish for the summer time. For this recipe, you can use pretty much any potatoes that you like. I like to use rust potatoes or small golden potatoes. After boiling the potatoes, add a little bit of butter and olive oil. Then I chop up hard boiled eggs, red onions, green onions and dill. I add some mustard and mayonnaise, and fresh lemon juice. For seasoning, I add salt, pepper and paprika. Unfortunately, I don't use measurements when I cook, so please add the ingredients as to taste and as you see fit!
