I decided I want to learn how to make Greek grilled octopus, like in Greece. The issue is that I am in the United States so things are different. When buying octopus, what do I need to look out for? After that, what do I need to do in order to get it to taste similar to how it does in Greece? I like it to be tender, and have a bit of a charred taste.
