When I go to Greece I love to order "Toast" (Tost) as a snack or light lunch...
When I get home, I try to make them, as well - but the method and combinations are slightly different.
Here is what I do - I get some bread from the Greek store and slice it into sandwich size shapes.
I think toast two slices lightly in the toaster.
Then, I assemble the combinations - usually some kind of Greek cheese, plus whatever else I feel like. In Greece I loved versions with combinations of cheeses, ham and cheese, cheese and tapenade or sundried tomato, etc.
Then, I add olive oil to a skillet and cook the sandwich on the stovetop. I don't have a panini press but I'd use that instead if I did.
