When I go to Greece I love to order "Toast" (Tost) as a snack or light lunch...

When I get home, I try to make them, as well - but the method and combinations are slightly different.

Here is what I do - I get some bread from the Greek store and slice it into sandwich size shapes.

I think toast two slices lightly in the toaster.

Then, I assemble the combinations - usually some kind of Greek cheese, plus whatever else I feel like. In Greece I loved versions with combinations of cheeses, ham and cheese, cheese and tapenade or sundried tomato, etc.

Then, I add olive oil to a skillet and cook the sandwich on the stovetop. I don't have a panini press but I'd use that instead if I did.

How do you guys make this?
 
In most Greek households you just take sandwich bread, ham, and cheese and stick it between a sandwich press..... and that's how I make it. My wife prefers turkey, so she uses that. I prefer to use smoked gouda and she prefer kaseri because she what's she grew up on.
 
I make these all the time, too. Ham and cheese or turkey and cheese a favorites. Sometimes I had tomato. When I am in Greece I love buying ham and cheese toasts at street vendors.
 
I don’t know if it the toast it self that is so yummy or if I’m just so super hungry after a good swim in the sea that makes it yummier. I usually make mine in a panin I press. I use Gouda cheese which is the cheese used in Greece to make the toast. I also like to add ham in mine.

Greek Souvlaki Marinade Recipe

Now that grilling season is upon us, I thought I would share my souvlaki marinade. I cut the meat in cubes and marinate in plastic bags overnight. I skewer them just before grilling.

Add to a mason jar:
  • 1/4 cup Greek olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
Then I cover the mason jar and shake, add the meat to the bags, and pour it over. If I am making a huge batch I double the marinade.

Here's what I can think of so far:

  • Frying - usually in olive oil, right? Things like Greek fries and kourabedies come to mind is being fried.
  • Grilling - souvlaki, chicken, etc
  • Sandwiches - gyros, making "toast" that you see on menus in Greece
  • Braising - like braised lamb?
  • On the spot - Lamb, goat
  • Baking - desserts and savory dishes
