Sofrito is one of Greece's best regional dishes! The recipe consists of a sauce made from parsley and spices that are used to marinade veal. The dish is a stew, which is super popular in Greece although most stews are called "kokinista" which are stews with tomato sauce. This stew is one of the few in Greece that is not made from a red sauce which is why you should really try it when you're visiting Corfu!!

I have never eaten or had this dish in Greece. I thought this was a Spanish origin dish? Or Italian? I guess since it is Corfu, that makes sense, since I believe the island had some Italy ties?

They are so beautiful, and I would love the opportunity to visit the island during the holidays. Are there any other islands that are a must visit during easter?


These are the best hotels to go to in Corfu

There are many different hotels to choose from in Corfu, ranging from adults only resorts, to cause beachfront sports to really cheap and really expensive. If you look early enough, there is something for everyone. If you have a big budget, I recommend Grecotel Corfu Imperial. If you want something less expensive, and more bang for your buck, check out Hotel Nefeli. It is only $140 a night.

Nissaki beach is a must visit in Corfu!

Nissaki beach is amazing! It is a small secluded beach that has very clear blue water and white smooth sand with small pebbles. I really recommend it for anyone that is interested in a quieter beach. I do recommend going earlier in the morning to reserve a beach chair, as you can see there aren't many chairs so they fill up quickly. There is also parking right above the beach, but it will also fill up pretty quickly.

The Canal DAmour in Corfu is stunning

The Canal D'Amour is located in the Siari neighbhood of Corfu, which is wonderful for eating out at restaurants, watching the sunset, and of course swimming by the beach. The canal is a small inlet of water that is blocked off by two large strips of land on both sides. I have copied links so that you can know exactly what it looks like. The area here is so peaceful when it is not crowded and offers such a serene vibe. I highly recommend that you spend the whole day here and watch the sunset overlook the canal at the end of the night.

I might visit Corfu this year and I love the beach. Are is a list of beaches:

- Sidari Beach
- Corfu Beach
- Agios Spiridon Beach
- Angelokastro Beach
- Paleokastritsa Beach

I know next to nothing about these beaches. Which are good? Did I miss any? If I only had time for a few of these, which would you choose?
