I need some tips for making Greek fries. My family tends to soak the potatoes in water for about ten minutes after slicing the fries. I haven’t done that, and something is off about my fries.

Do you think this really makes a difference? My fries are soggy, so it could be something else, or this could be part of the issue.

I think soaking them in cold water removes some of the starch. That’s how my family does it too.

Yes. that is how my mother always did it before frying the potatoes.

Same! We soak the potatoes, as well.

However, the sogginess could be from something else. It could be because you put the fries in the oil when it wasn't hot enough. The oil needs to be the right temp, otherwise the fries will just absorb the oil and not get crispy.

I have learned so much about Greek cuisine by being on this forum! I know that there are standard recipes that everyone seems to cook.

For example, you can get souvlaki all over. Everyone seems to serve a village salad with slight variations. Most regions seem to make moussaka. There are tons of others.

I have also noticed that each region has their own specialties. How do you go about learning about them?
